Abstract
Chia (Salvia hispanica), one of the main foods of Pre-Columbian civilizations, is a good source of protein, polyunsaturated n-3 fatty acids, fiber, antioxidants, minerals and vitamins. These nutritional characteristics suggest that this food may be used as a supplement, thereby improving a common diet.
